Muesli

So many people ask me whether granola is a healthy breakfast, and as a simple answer, I have to say no. While most contain plenty of whole grains and nuts which are a great source fibre and protein, this quickly becomes unbalanced by the unhealthy amount of sugar and fats that they also contain. This is why have decided to come up with an alternative; a toasted seed and grain muesli which can be eaten with just milk, or with some yoghurt and fruit, just as you would granola.

How to make

Step 1: Preheat the oven to 160 C fan.

Step 2: Mix the oats, seeds, puffed rice and spices together and spread across a large flat baking tray.

Step 3: Put in the oven for 15 minutes, tossing every 5 minutes. The mix should have a very subtle golden colour and have a nutty smell when ready.

Step 4: Remove from the oven and allow to cool on the tray. Once fully cooled, mix with the dried fruit and keep stored in an airtight container.

I love to eat mine with a tablespoon of greek yoghurt, fresh seasonal fruit and a dash of milk.

porridge oats

jumbo oats

rye flakes

puffed rice

1 tsp ground cinnamon

1/2 tsp ground ginger

dried apple or apricots, sliced


To serve:

Greek yoghurt

Milk

Fresh fruit
